Make Mrs Bardell's cherry buns

Makes 12 buns

You will need:

  • 180g plain flour
  • 1/2 tsp baking powder
  • 60g ground rice or cornflour
  • 60g butter
  • 60g caster sugar
  • 60g glacé cherries, chopped
  • 1 egg, beaten
  • 150ml Milk

 

 1. Preheat the oven to 200C. Grease a 12-hole muffin tin.

2. Put the butter, plain flour and ground rice or cornflour in a large bowl. Use your fingers to rub them together until fully combined.

3. Add the sugar and most of the cherries, saving a few for later. Mix to combine.

4. Add the egg, milk and baking powder and mix until smooth.

5. Spoon the mixture into the prepared muffin tin, dividing equally between the 12 muffin holes. Top each bun with half a cherry and bake in the oven for 10 to 15 minutes, until lightly golden brown and cooked through.

6. Allow to cool in the tin for 5 minutes, then turn out onto a wire rack to cool completely.
