Make Jamaican shrimp curry
Serves 4
You will need:

2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1 tsp fresh thyme, chopped
- ½-1 tbsp Jamaican curry powder*
- 1 tbsp tomato puree
- ½ red pepper, diced
- 2 spring onions, chopped
- 240ml coconut milk
- 240ml chicken or vegetable stock
- 450g king prawns
*You can either buy Jamaican curry powder online or make your own by combining the following spices in a pestle and mortar:
- 2 tsp turmeric
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1.5 tsp fenugreek seeds
- ½ tsp black pepper
- ¼ tsp ground clove
- ¼ tsp cayenne pepper
Method
1. Carefully heat the oil in a large pan. Add the onions, garlic, thyme and curry powder, and fry for 2-3 minutes.
2. Add the tomato puree, pepper, spring onions, coconut milk and stock. Bring to the boil and simmer for 8-10 minutes until the sauce has reduced.
3. Add the prawns and cook for a further 3-5 minutes.
4. Season with salt and pepper and serve with rice.
