Make Greek honey and orange cake

Greek honey and orange cake recipe

 

Serves 8 

You will need:

  • 3 eggs

  • 190g Greek yorgurt
  • 260g caster sugar
  • 3 tbsp ground almonds
  • 1 lemon, zest and juice
  • 2 oranges, zest and juice
  • 100g plain flour
  • 120g semolina
  • 1 ¼ tsp baking powder
  • 115ml olive oil
  • 290g runny honey
  • 100g chopped pistachios

       

      1. Preheat the oven to 180C. Grease and line a 22cm square cake tin.

      2. Put the eggs, yogurt, sugar, ground almonds, flour, semolina, baking powder and olive oil in a large mixing bowl. Use a handheld mixer to combine.

      3. Add the zest of one lemon and one orange. Mix to combine.

      4. Pour the cake mixture into the prepared tin.

      5. Place in the oven and bake for 25-30 minutes until golden in colour. You will know the cake is cooked if a skewer inserted into the cake comes out clean. Remove from the oven and allow to cool completely in the tin.

      6. While the cake is cooling, make a honey syrup. Toast most of the chopped pistachios (leaving a handful to one side) in a small saucepan over a medium-low heat for 2-3 minutes.

      7. Add the honey along with the juice of one lemon and both oranges. Bring to the boil and reduce for 1-2 minutes until the texture becomes syrupy.

      8. Once the cake is fully cooled, remove from the tin and place on a wire rack. Use a skewer to poke holes all over the cake.

      9. Pour the honey syrup all over the cake. Sprinkle with the remaining pistachio pieces or some flaked almonds if you have them. Allow the cake to soak in the syrup for 30 minutes or so before serving.
