Make blueberry muffins

Makes 12 muffins
You will need:
- 60g butter
- 280g plain flour
- 1 tbsp baking powder
- Pinch of salt
- 200g caster sugar
- 1 egg
- 1 tsp vanilla extract
- 250ml milk
- 200g blueberries
1. Preheat the oven to 220C. Line a 12-hole muffin tin with muffin cases.
2. Put the butter in a small saucepan and gently melt over a low heat.
3. Break the egg into a bowl and beat lightly. Add the melted butter, vanilla and milk. Beat until frothy.
4. In a separate bowl, mix together the flour, baking powder and salt. Add the sugar and combine, then make a well in the centre.
5. Pour the egg mixture into the flour. Gradually stir to combine until you have a smooth batter.
6. Gently fold in the blueberries, being careful not to overmix.
7. Spoon the batter into the muffin cases, so that each one is ¾ full.
8. Bake in the oven for 15-20 minutes until golden on top. Remove from the oven and allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
