Make apple cupcakes
Makes 12 cupcakes
You will need:
- 120g self-raising flour
- 1 tsp ground cinnamon
- 120g butter
- 60g soft brown sugar
- 60g caster sugar
- 2 eggs
- 2 large apples, peeled, cored and diced
To decorate:
- 100g butter
- 200g soft cheese
- 2 tsp vanilla extract
- 450g icing sugar
- 1 small apple, thinly sliced
1. Preheat the oven to 190C. Line a tray with 12 cupcake cases.
2. Put the butter, flour, sugars and cinnamon in a bowl. Using a handheld mixer, beat to combine.
3. Add the eggs, one at a time, and combine until you have a smooth mixture.
4. Carefully mix in the diced apple pieces.
5. Pour the mixture evenly into the cupcake cases until each one is about two thirds full.
6. Bake for 12 to 15 minutes until the cakes are golden and springy to the touch.
7. Remove from the oven and allow to cool in the tray for 5 minutes, then transfer to a wire rack to cool completely.
8. Meanwhile, make the cream cheese icing by mixing the butter and cream cheese in a bowl using a handheld mixer.
9. Add the vanilla extract, then mix in the icing sugar a little at a time until fully combined.
10. When your cakes are cool, spoon or pipe the icing over the top and decorate with thin slices of apple.
