Make a delicious apple pie

This simple recipe for apple pie is an easy way to use up a surplus of apples!
Serves 6
You will need:
- 4 large eating apples
- 2 sheets puff pastry
- 100g brown sugar
- 1 tbsp honey
- ½ tsp cinnamon
- ½ tsp nutmeg
- 2 tbsp plain flour
- 50g butter
- 1 tsp lemon juice
1. Preheat the oven to 180C. Line a 35mm pie tin with one sheet of puff pastry. The pastry should come up over the edge of the tin.
2. Carefully peel and thinly slice your apples. Place half the sliced apples in the tin.
3. Sprinkle the cinnamon, nutmeg, honey and half of the sugar over the apples in the tin.
4. Layer the remaining apple slices in the tin, then cover them with the remaining sugar and the flour. Divide the butter into small pieces and dot these over the top.
5. Drizzle the lemon juice over the contents of your pie, then cover the top with the second sheet of pastry.
6. Use a fork to crimp the edges of the pastry around the tin. Sprinkle over a little more brown sugar and cut two steam vents in the top.
7. Bake in the oven for 1 hour until the top is golden brown and the filling is hot and bubbling. Serve immediately.
