Make a cherry ice cream sundae
Serves 2
You will need:
- 400g cherries, fresh or frozen
- 600ml double cream
- 6 tbsp icing sugar
- 400g can condensed milk
- 1 chocolate brownie
- 2 chocolate chip cookies
- 50g dark chocolate
- Whipped cream
- Sprinkles
1. Put a handful of cherries aside for later. Place the remaining cherries in a large saucepan along with 4 tbsp water.
2. Carefully bring to the boil and simmer for 6 minutes, or until the fruit has broken down and the liquid has thickened slightly. Remove from the heat and allow to cool.
3. Pass the cooked fruit through a sieve into a large bowl, using the back of a spoon to press down and squeeze out all the juice. Discard the remaining pulp from the sieve.
4. In a separate bowl, mix together the double cream, icing sugar and condensed milk. Use a handheld electric whisk to whisk the mixture until it is thickened but not too stiff.
5. Add the fruit puree and a few of the reserved cherries, and stir to combine.
6. Pour into a freezer-proof container, cover and freeze for at least 6 hours before serving.
7. Put the chocolate in a heatproof bowl and gently melt over a pan of simmering water until completely smooth. Set to one side.
8. To assemble your sundae, start by crumbling the chocolate brownie into the bottom of two tall glasses.
9. Add one scoop of cherry ice cream to each glass.
10. Add a couple of the reserved cherries, then another scoop of ice cream.
11. Crumble a chocolate chip cookie into each glass, then add a third scoop of ice cream.
12. Pour your melted chocolate over the top.
13. Add a squirt of whipped cream and decorate with coloured sprinkles and any remaining cherries.
