Make chocolate digestive biscuits
Makes 12-15 biscuits
You will need:
-
200g wholemeal flour
- 200g oatmeal
- 180g butter, cubed
- ½ tsp bicarbonate of soda
- 65g muscovado sugar
- ½ tsp salt
- 3 tbsp milk
- 180g chocolate
1. Put the flour and oatmeal in a large bowl and mix together.
2. Rub the butter into the flour mixture using your fingers, until it looks like breadcrumbs.
3. Add the bicarbonate of soda, sugar and salt and mix together. Slowly add just enough milk to bring the mixture together until you have a dough that holds together well.
4. Flatten the dough into a disc, wrap it in clingfilm and chill in the fridge for 30 minutes.
5. Preheat the oven to 170C and line two baking trays with baking paper.
6. Remove the dough from the fridge and, on a very lightly floured surface, roll out to about 4mm thickness.
7. Cut out your biscuits and place them on the prepared trays, leaving plenty of space between each one.
8. Bake for 12-15 minutes until golden in colour. Allow to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
9. Meanwhile, put the chocolate in a heatproof bowl over a pan of simmering water and stir until melted. Once the biscuits are cool, carefully dunk one side of each biscuit in the melted chocolate to coat, then return to the wire rack until the chocolate is set.
