Make San Francisco Mission burritos
Inspired by Anticipation’s San Francisco setting, we think you’ll enjoy this simple recipe for a classic dish that originated in San Francisco's Mission District.
Makes 4-6 cookies
You will need:
For the marinade:
- 3 tbsp olive oil
- 3tbsp orange juice
- 1.5 tsp lime juice
- 1 tbsp sliced jalapeno peppers, finely chopped
- 1 clove garlic
- ½ tsp ground cumin
- 15g fresh coriander, finely chopped
For the burritos:
- 250g steak
- 1 onion, finely chopped
- 400g can pinto or black beans
- 4 large flour tortillas (or 6 medium tortillas)
- 200g cheese, grated
- 250g ready-made salsa
- 250g rice, cooked
- 150ml sour cream
- 250g guacamole
1. Mix all the marinade ingredients together in a small bowl. Place the steak in a shallow oven-proof dish, pour over the marinade, cover and set aside for 2-3 hours.
2. Heat a tablespoon of oil in a frying pan. Add the steak and cook over a medium to high heat for 2 to 3 minutes on each side.
3. Remove the steak from the heat and set aside on a chopping board to rest.
4. Heat a tablespoon of oil in a medium-sized saucepan. Add the chopped onions and cook over a medium heat for a few minutes until softened.
5. Add the drained beans and cook for a further 3 or 4 minutes.
6. While the beans are cooking, heat the tortillas according to the instructions on the packet.
7. Slice the steak into strips.
8. To assemble the burritos, lay the tortillas out on a clean surface. Divide the beans, steak, cheese, guacamole, sour cream and salsa into 4 portions and layer in the centre of each tortilla.
9. Fold one half of each tortilla into the centre to cover the filling. Take the adjacent sides and fold them into the centre, then fold the fourth side tightly over the other three.
10. Wrap in foil and serve immediately.
