Make pineapple fritters

Makes 6 fritters
You will need:
- 100g plain flour
- 2 tsp baking powder
- Salt
- Vegetable oil
- 6 pineapple rings (fresh or tinned)
- 75g caster sugar
1. Put the flour, baking powder and salt in a bowl and mix to combine.
2. Add 1 tbsp vegetable oil and 150ml water. Whisk the mixture until you have a thick and creamy consistency that will coat the back of a spoon. Add a little water or flour to adjust the consistency if necessary.
3. Pour vegetable oil into a small saucepan until it is about 1/3 full. Place on the hob and heat to about 180C.
4. While the oil is heating, dip each pineapple ring in the flour mixture until it is fully coated.
5. When the oil is ready, carefully place a battered pineapple ring in the saucepan and cook for 1 to 2 minutes on each side until golden brown. You may be able to cook 2 or 3 rings at the same time, depending on the size of your saucepan.
6. Carefully remove the cooked fritters from the oil and place on a sheet of kitchen roll.
7. Put the sugar in a bowl and dip the cooked fritters in the sugar to coat.
8. Serve while still warm with a drizzle of syrup or a scoop of ice cream.
