Make masala chai

Masala chai, often simply referred to as chai, is a delicious warm drink originating from the Indian subcontinent. It's a spiced tea blend that typically includes a combination of black tea, aromatic spices, milk and sweeteners. It is often served to guests as a sign of hospitality or shared among friends and family during gatherings and celebrations.
Serves 2
You will need:

1 cinnamon stick
- 6 cardamom pods
- 1 tsp fennel seeds
- 250ml full fat milk
- 2.5cm fresh root ginger, peeled and chopped
- 2 strong black tea bags
- 3 tsp caster sugar
1. Crush the cinnamon, cardamom and fennel seeds in a pestle and mortar to create a coarse spice mixture.
2. Put the milk, ground spices, ginger and tea bags in a small saucepan.
3. Bring to the boil and simmer for 10-12 minutes, stirring regularly.
4. Add 100ml water and simmer for a further 5 minutes. Keep stirring regularly to ensure that the milk doesn’t burn.
5. Add the sugar and stir to combine.
6. Strain the chai and pour into mugs to serve.
