Make fortune cookies
Makes 12-15 cookies
You will need:
- 2 egg whites
- 1 tsp vanilla extract
- 100g plain flour
- 100g caster sugar
1. Preheat the oven to 180C and line a large baking tray with baking paper.
2. Write your fortunes on strips of paper approximately 6cm long by 1cm wide.*
3. Put the egg whites and vanilla extract in a bowl and whisk until frothy.
4. Add the flour, sugar and a pinch of salt to the mixture and whisk everything together to form a smooth batter.
5. Put 1-2 spoonfuls of batter on the baking tray and use the back of a metal spoon (greased with a little oil) to spread the batter into an 8-10cm circle.
6. Repeat to create another 1 or 2 circles on your tray, making sure there is plenty of room between each one. It is best to bake 2-3 cookies at a time as you will need to shape them while they are still soft.
7. Bake in the oven for 8-10 minutes until the edges start to turn golden brown.
8. Remove the tray from the oven. Carefully remove a cookie from the tray using a palette knife or wide spatula. Place it upside down on a wooden board.
9. Put a fortune cookie in the middle of the circle.
10. Fold the circle in half around the paper and pinch the edges together.
11. Place the folded edge over the rim of a mug and gently pull the pointed ends down to create the fortune cookie shape.
12. Carefully place the cookie in a muffin tin to hold its shape as it cools.
13. Repeat to create and fill your second cookie.
14. While the first batch of cookies is cooling, bake 2-3 more cookies, repeating steps 5 to 12 until you have used up all your batter.

‘The fortune you seek is in another cookie.’
