Make currant buns
Makes 12 currant buns
You will need:
- 400g plain flour
- 50g granulated sugar
- 1/2 tsp salt
- 7g dry yeast
- 120ml warm milk
- 60ml warm water
- 60g unsalted butter, melted
- 1 egg, beaten
- 150g currants
- 1 tsp ground cinnamon
- 1 egg yolk, beaten
1. In a small bowl, mix the warm water and a teaspoon of sugar. Sprinkle the yeast over the top and let it sit for about 5 minutes until it becomes frothy.
2. In a large mixing bowl, combine the flour, sugar, salt and cinnamon.
3. Make a well in the centre and add the warm milk, melted butter, beaten egg, and the activated yeast mixture.
4. Mix until the dough starts to come together.
5. Add the currants to the dough and knead for about 10 minutes until the dough is smooth and elastic.
6. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours or until it has doubled in size.
7. Punch down the risen dough and divide it into 12 equal pieces.
8. Shape each piece into a round bun and place them on a baking sheet lined with baking paper, leaving some space between each bun.
9. Cover the buns with a damp cloth and let them rise for further 30-45 minutes until they are puffy.
10. Preheat the oven to 190C.
11. In a small bowl, mix the beaten egg yolk with 1 tbsp of water. Brush this glaze over the tops of the risen buns.
12. Bake in the preheated oven for 15-20 minutes or until the buns are golden brown.
13. Let the currant buns cool on a wire rack before serving.
