Make cinnamon swirls
Makes 10 swirls
You will need:
- 300g self-raising flour
- 4 tbsp caster sugar
- 2 tsp ground cinnamon
- 130g butter
- 2 egg yolks
- 200ml milk
- 55g light brown soft sugar
- 60g icing sugar
- 1 tbsp cream cheese
- 1/2 tsp vanilla extract
Method
1. Preheat the oven to 180C. Line a baking tray with baking paper.
2. Mix the flour, 2 tbsp caster sugar and 1 tsp ground cinnamon together with a pinch of salt in a bowl.
3. Whisk together 100g melted butter, the egg yolks and milk, then combine with the dry ingredients to make a soft dough.
4. Turn out the dough onto a lightly floured surface and roll out to a rectangle, approximately 30 x 25cm.
5. To make the filling, mix together 1 tsp ground cinnamon, 2 tbsp caster sugar, 20g melted butter and the soft brown sugar.
6. Spread the filling evenly over the dough then roll it up lengthways, like a Swiss roll, to form a log. Carefully cut the dough into 8 to 10 slices and place onto the prepared tray.
7. Brush gently with a little milk and bake for 30-35 mins or until golden brown. Remove from the oven and cool for 5 mins before removing from the tray.
8. Sift the icing sugar into a large bowl. Add the cream cheese, 10g melted butter and 2 tbsp boiling water, then stir to mix. Add a little more water until you have a drizzly consistency. Stir in the vanilla extract, then drizzle the icing over the buns. Serve warm or cold.
