Make apple buns
Makes 10-12 buns
You will need:
For the dough:
- 320g plain flour
- 2 tbsp caster sugar
- 1 tsp salt
- 1 packet (7g) instant yeast
- 180ml warm milk
- 60g unsalted butter, melted
- 1 egg
For the filling:
- 2 medium apples, peeled, cored, and diced
- 2 tbsp butter
- 2 tbsp caster sugar
- ½ tsp ground cinnamon
For the topping:
- 1 egg yolk
- 1 tbsp milk
- Icing sugar
1. To make the dough, put the flour, sugar, salt and yeast in a large bowl and mix to combine.
2. Add the warm milk, melted butter and egg. Mix until a dough forms.
3. Knead the dough in the bowl for 8-10 minutes until smooth and elastic.
4. Place the dough in a second greased bowl, cover and leave to rise in a warm place for about 1 hour or until doubled in size.
5. To make the filling, melt the butter in a small pan over a medium heat.
6. Add the diced apples, sugar and cinnamon. Cook for 5-7 minutes until the apples are soft and caramelised. Remove from the heat and leave to cool.
7. Once the dough has risen, punch it down and divide it into 10-12 equal portions.
8. Roll each portion into a ball, flatten it slightly and place a spoonful of apple filling in the centre.
9. Pinch the edges together to seal, forming a bun. Place seam-side down on a baking tray lined with baking paper.
10. Cover the buns with a clean tea towel and let them rise for a further 20-30 minutes.
11. Preheat the oven to 190C.
12. Mix the egg yolk and milk together to make an egg wash. Brush over the buns.
13. Place the buns in the oven and bake for 12-15 minutes until golden brown.
14. Remove from the oven and allow to cool slightly before dusting with icing sugar and serving.
